White Tea
Primarily grown in the Chinese province of Fujian, white tea is a lightly oxidized tea, coming from the delicate buds and younger leaves of the Chinese Camellia sinensis plant. The characteristic of the flavor of white tea is preserved by the white teas nature to wither in sunlight before being lightly and carefully processed to prevent oxidation. White tea is the least processed tea and has the highest antioxidant levels. White tea, being the most rare and sought after tea in the marketplace, is more often than not described as delicate, smooth, sweet and fresh. There were even ancient legends proposing that only virgins were able to harvest the plant with their soft and brittle fingers, so to not crush the delicate leaves and buds. Due to its minimus processing, white tea is the most delicate of all teas. The manufacturing process of white tea could not be more simple and straightforward, especially in comparison to other teas. The process follow a set of simple procedures of firstly picking the fresh tea leaf, then witchering it, finally drying the tea by either air drying, solar drying or mechanical drying. To enjoy white tea at it supremacy purified water is best, allow water to slightly cool after boiling to avoid 'cooking' the leaves. Steep the tea for 4-15 minutes, depending on the amount of tea compared to water and also to personal preference.
