After picking, the processing of sencha green tea starts with a quick steam of the fresh tea leaves, preventing oxidization and locking in the green colour and flavor. The leaves are then rolled, shaped, and dried.

Hint: For the best brew, place one teaspoon of loose leaf tea per cup into a teapot with the water at 170 degrees C. Leave for two minutes for a perfect brew every time.
